Easy Egg and Vegetable Stir-Fry
This recipe is quick, affordable, and doesn’t need any fancy ingredients. It’s perfect for breakfast, lunch, or even dinner.
Ingredients:
- 2 eggs
- 1 small onion (chopped)
- 1 tomato (chopped)
- 1 green pepper (chopped)
- 1 small carrot (optional)
- Salt (to taste)
- Black pepper or chili (optional)
- 2 tablespoons of oil (vegetable or olive oil)
Steps:
- Prepare the vegetables.
Wash and chop the onion, tomato, green pepper, and carrot (if you’re using one). Set them aside. - Beat the eggs.
In a small bowl, crack the eggs and beat them with a pinch of salt and black pepper or chili, depending on your taste. - Cook the vegetables.
Heat the oil in a pan over medium heat. Add the onions first and fry for about 2 minutes until they are soft. Then add the tomato, green pepper, and carrot. Cook for about 3–5 minutes, stirring occasionally. - Add the eggs.
Pour the beaten eggs into the pan over the cooked vegetables. Stir slowly and cook until the eggs are firm and mixed well with the vegetables. This usually takes around 2–3 minutes. - Serve hot.
You can eat this stir-fry with bread, rice, or injera. It’s healthy, filling, and can be made in under 15 minutes.
